Sweet Basil and Ginger Tea

(2 servings)


Ingredients:

  • 10 leaves fresh basil
  • 2 TBS fresh ginger root, slices (~1 inch)
  • 1 tsp. honey, local if possible
  • 2 TBS fresh lemon juice
  • 4 cups water
How To Prepare

Peel and slice the fresh ginger root into thin pieces. Wash basil gently under cold water and pat dry with a clean dish towel. *peeling ginger is easiest when using a spoon... the skin on the ginger is very fine and comes off easily when scrapped with a spoon.

In a tea pot (or small sauce pan), add water and sliced ginger. Bring to a boil and reduce to a simmer. Let simmer 2-3 minutes, the water should turn a light-golden hue. Turn the water off and add the basil leaves, let steep (covered) ~10 minutes.

Strain tea into two large mugs (leaving behind the ginger and basil). Stir in 1 TBS of lemon juice and 1/2 tsp. of honey into each mug. One fresh slice of ginger and fresh torn basil can be added for garnish. Serve warm.
