Heirloom Tomato and Cucumber Salad

(4 servings)


Ingredients:

  • 2 large Heirloom tomatoes
  • 1 cucumber, diced
  • 2 TBS kalamata olives
  • 1/4 cup plain yogurt (goat's or cow's milk)
  • 1/2 tsp. agave nectar
  • 1/2 tsp. cracked red pepper
  • 1 TBS fresh squeezed lemon juice
  • 1 TBS fresh basil, finely chopped
  • 1 TBS fresh parsley, finely chopped
  • dash sea salt and fresh cracked black pepper
How To Prepare

Wash veggies and fresh herbs, pat dry.

Using a cerated knife, slice tomatoes in thick (~1/4”) slices, arrange on a plate.

In a small bowl, mix together yogurt, agave, cracked pepper, salt and pepper and lemon juice. Finely chop herbs and add to the yogurt dressing as well.
