Irish Girl's Soda Bread

Ingredients:
- 1 cup brown rice flour
- 1 cup tapioca flour
- 1/2 cup sorghum flour
- 2 tsp. baking powder (low or no sodium)
- 1 tsp. baking soda (low or no sodium)
- 1/2 tsp. sea salt, fine grain
- 2 tsp. xantham gum
- 4 TBS organic butter or ghee
- 1 whole egg
- 2 egg whites
- 1 TBS maple syrup
- 1/3 cup raisins
- 1/2 cup milk
Pre-Heat your oven to 350 degrees.
Place raisins in a small bowl and cover with very hot water, set aside 10 minutes (this re-hydrates and plumps the raisins).
In a large bowl, combine dry ingredients, brown rice flour through xantham gum. Stir to combine.
Next, cut the COLD butter or ghee into your flour mixture. You can do so with a pastry cutter or by cutting across the flour and butter in opposite directions using two butter knives. Do this until the mixture resembles a coarse corn meal.
In another bowl, whisk together wet ingredients, eggs through milk. Pour into the bowl with you the flour and butter mixture, gently stirring together just until thoroughly combined.
Once the mixture is combined, lightly flour your hands and gently pat the dough into a large, round shape about 2 1/2" high. Place on a baking sheet and bake for 45 minutes in a 350 degree oven.
*Pair with eggs or spread with almond butter and apple slices for a great breakfast or snack!
