Smoked Salmon and Goat Cheese Omlet
(4 servings)
Ingredients:
- 4 slices nitrate/preservative free smoked salmon
- 1/3 cup creamy goat cheese
- 2 TBS chives, finely chopped
- 4 cups fresh spinach, roughly chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp. olive oil
- 1 tsp. sea salt
- 1/4 tsp. black pepper
- 2 whole eggs
- 6 egg whites
Start by whisking together eggs, salt, pepper, parsley and spinach. In a heavy skillet, brush olive oil and ghee around bottom of skillet to create a non-stick surface. Pour egg mixture into pan on medium-low heat.
Using your spatula, lift the edges of the egg to allow raw portions of the egg to reach the bottom of the pan. In doing so, you are also ensuring that the egg is not sticking to the pan (if so, add a small amount of additional ghee to prevent sticking).
When the egg is fully cooked on the bottom, slide it out onto a plate and invert the skillet over the plate to flip the egg without breaking it apart.
With your spatula, divide eggs into four wedges and place on individual dishes.
Divide goat cheese evenly among the four dishes, slathering it on the top surface of the egg, top with one piece of smoked salmon and serve.
