Stuffed Apple Bake
(4 servings)
Ingredients:
- 1 cup brown rice, cooked
- 1/2 cup raw almond butter
- 1 tsp. sea salt
- 1 tsp. cinnamon
- 1/2 tsp. stevia (natural sweetener)
- 1/4 cup golden raisins
- 1/2 cup hot water
Pre-heat oven to 350 degrees.
Place the raisins in hot water to allow them to soften and plump.
Slice about 1/4" off the top of the apple, eliminating the stem and creating a flat top where you can see some of the core. With a grapefruit spoon (or if you do not have one, a paring knife), scoop out the core of the apple to create a cavity for your stuffing.
To make the stuffing, stir together remaining ingredients (drain and pat dry raisins before adding them), until thoroughly combined. Using about 2 TBS of the mixture, stuff each apple with your rice and top with a sprinkle of additional cinnamon.
Bake about 20 minutes for a tender, but slightly crispy apple texture (leave in longer if you want the apple to be softer).
Naturopathic Doctor Says:
Apples have pectin, a wonderful soluble fiber that is helpful for both slow moving bowels and in cases when things are moving too quick. In Chinese medicine, cinnamon is considered a warming herb that brings blood to the surface and warms our bodies. Cinnamon and stevia are both natural herbs that can give a delicious taste and balance blood sugar. Raw almond contains healthy unsaturated fats and protein for a balanced and tasty treat..
